The Other Other White Meat


This summer I found a local farmer who raises lamb and rabbit organically… and their prices are fantastic. I ordered a whole lamb and 4 rabbits.

The other night Himself requested I fix one of the rabbits. I wasn’t in the mood for a stew or fry… so I went recipe searching and found one that sounded really good.

It turned out wonderful and was very easy to prepare. The whole house smelled wonderful as it simmered on the stove. Himself said the recipe is a “keeper”.

Rabbit Sautéed in Wine, Mushrooms & Fresh Rosemary

Ingredients:

2 to 3 lb. young rabbit, cut into serving pieces

3 T. olive oil

1/3 c. plus 1 c. dry white wine

1 small onion, chopped

1/2 lb. mushrooms, sliced (shitake work well)

1/2 t. sugar

1 T. flour

2 garlic cloves, minced

1 T. fresh rosemary, minced

1 c. chicken broth

2T. balsamic vinegar



Directions:

In a large heavy bottomed sauté pan, brown rabbit in hot olive oil until golden brown, about 5 - 6 minutes on each side. Reduce heat to medium, remove pieces to a large plate and set aside, leaving drippings in pan.

To pan add 1/3 cup wine, onions, mushrooms and sugar, sautéing for 5 minutes until onions are softened. Stir in flour, garlic and rosemary, sautéing for 2 minutes more. Mix in remaining 1 cup wine, chicken broth and vinegar, bringing to a slow boil. Place rabbit pieces back in pan and simmer 50 to 60 minutes uncovered until done.

Remove cooked rabbit pieces from sauce and arrange on serving platter. Drizzle 1/4 the sauce from pan over rabbit, serving remaining sauce on the side.

Probably my favorite Christmas song.  A long time ago I heard it performed by an unknown singer (male baritone) and it was incredible.  The singer sound as tho he were one of the shepherds and was telling what he saw that miraculous night.  It was so beautiful.

Pass The Christmas Popcorn

There are a few movies that are part of my Christmas season, ones that put me in the holiday mood.  Most of these I have on DVD as it seems to be getting harder and harder to find them on TV.  I'll be getting the DVDs for Hanna and Owen when they're a bit older as I can't imagine them missing out on these treasures!

Last year's theme at "ICE" at Opryland was Charlie Brown Christmas.  It was one of the first books I bought for Hanna.  Hopefully it will be with us for generations to come.  Love the straight forward Christmas story told by Linus!

Ice Fog

Winter has come.  Living next to the river, the cold morning temperatures combine with the moisture from the river to create beautiful ice fog.

The fog becomes frost where it finds a place to cling.  It’s so delicate just breathing on it causes it to melt.



Everything is in silhouette.  There is no sound, no breeze.  Just silence.

The sun shines weakly at first, the fog too thick to penetrate.  It’s early morning and the angle makes the light a soft yellow.

As the sun rises and strengthens, the yellow becomes more intense until suddenly it shifts back to ‘normal’ as the fog thins.

Which is True?

Behold… The Tomato.  Don’t they look lovely on the counter?  Ripe, juicy, red. 

It’s even pretty when you back up.  Three beautiful pears are the perfect companions. 

Still gorgeous when you move to the right a bit.  The light is just right, the shadows fall mysteriously.   What’s in the basket?  Let’s back up some more…

OPPS!!! A little too far!!! Where did that mess come from??

People’s lives are like the vignettes that are so popular in Blogland. Indeed there are beautiful parts but there are also the messes that come with being human. The question is: Is the vignette of our room – or our life – the truth, or a work of fiction?

Why?

What is more true? That which we wish to be or that circumstance we find ourselves in?

Guest Blog: Himself -- "Concussion"


I liked the story Himself wrote about our adventure yesterday and he agreed to share it.

Since getting a laptop computer Teri is able to work in the dining room instead of having to go downstairs where her desktop computer sat in her office. Being there is only two of us using the dinner table her laptop stays at the far end all the time…

Today, while pausing in her typing, she happened to look up and was ‘gazing off into the distance’ thru the windows. Besides having normal things like deck furniture and a gas grill on the deck, we have an iron hook with a net bag holding a chunk of suet for any type of birds that might like that sort of thing. One of the types of birds that does?

Downy woodpeckers...

Downy woodpeckers are fun to watch picking at the suet—with feet designed to cling to almost anything, however he lands on the suet bag is fine. If there are other birds crowding him, he will just hang upside down onto the bottom where other birds can’t.

Well, one must have been hanging upside down too long and had all the blood rush to his head...

Teri was looking out thru the windows just as one left the suet bag and flew straight into it. WHAM! (We are guessing that from the outside, the windows ‘reflect sky’ and a bird, seeing that, thinks that he can fly that way.) Regardless, after crashing straight on into the window, he fell unconscious to the loveseat cushion out there on the deck.

Good, at least that landing was soft...

Me? Being I woke up at 3:00 AM, I was taking a nap around 11:00 AM when this event happened. But sometimes you ‘become instantly awake’ when you hear the sound of your loved one’s voice calling out with alarm and concern. I was just getting to that phase of my nap where you ‘slide off into never-never land’ when I heard Teri’s concerned voice of, “Husband...?!” By the time I stumbled into the room Teri had already went to the glass window and saw feathers plastered to it -- some still un-sticking themselves from the glass and sliding down to follow their owner...

Our gaze following the falling feather’s owner, there lying knocked out was a downy woodpecker. Man, it MUST have been a hard hit to knock out a bird that obtains food by banging his head into a tree!

But time for a compassionate rescue.

We gathered up the poor little thing & brought him inside the house and out of the cold—putting him into a large yellow plastic pitcher on a bed of fluffed-up paper towels. Then put the lid on--leaving an air-hole large enough for the bird to get air but not crawl out. Then let him be for awhile.

The bird would make it, or not...

Going about our business, we eventually hear Downy waking up...scrambling a bit against the side of the pitcher...wondering how he went from flying in the wide-open great outdoors to waking up in a hazy yellow world. With a headache. Missing feathers...

The good news is that after reaching into the yellow pitcher and retrieving him, my poking and prodding of the poor thing got the proper response...

...he bit me.

OK, Downy is going to be just fine. After a little more wake-up time I took him out to the deck and tossed him into the air. Off he flew--with a slightly crooked flight pattern I suppose, but fly he did.

God is good...

Tennessee Thanksgiving with Family

Thanksgiving was extra special this year… it was nephew Little Hoss' first Thanksgiving and my family came down to TN to celebrate!

This meant we had to move a LOT of things off shelves to preserve them from curious 15 month old hands!   Didn’t take long for it to look like we had babies in the house!  Isn’t it grand!?

Munchies were laid out for snacking until the meal was done.  The summer sausage came from the bison ranch we visited on our trip a few weeks ago.

Then mid-afternoon it was time for the Thanksgiving feast.  We had turkey, dressing, gravy, mash potatoes, wild rice, Harvard beets, green beans, golden cauliflower, cranberry sauce (homemade), can cranberry jelly, and sour dough dinner rolls.

We also had red and white wine, plus sparkling grape juice.  Little Bird got to try the grape juice in her very own glass.

She was NOT impressed with the bubbles!

All too soon it was Saturday and it was time to load up the cars so everyone could head home. It was a fantastic weekend! I’m so glad they came down!!






Wild Rice Stuffed Mini Pumpkins

1/2 cup uncooked wild rice

3 to 4 cups water

4 mini pumpkins

Juice of 1 orange

2 teaspoons honey

Salt and pepper to taste

1/4 cup dried cranberries

2 tablespoons chopped pecans

1 teaspoon orange zest

1 teaspoon chopped mint

Preheat oven to 375°F.

In a small sauce pan, add wild rice and fill with enough water to cover and allow room to boil like cooking pasta. Bring to a boil and then simmer for approximately 30 to 40 minutes. Rice is done when it starts to "pop" the grain.

While rice cooks, cut tops off pumpkins. Using a large spoon, scoop out seeds and strings. Place pumpkins upside down in a pan with 1/3 inch of water. Bake for 15 minutes. Carefully turn pumpkins upright and return to oven until flesh is tender when pierced with a fork, about 5 to 10 more minutes.

When rice is cooked, pour into a colander and rinse with cold water. Place the rice in a medium size bowl.

Juice orange and add honey, mixing together. Pour over rice. Add salt and pepper, and stir well. Stir in cranberries, pecans, orange zest and mint. Adjust seasonings if needed. Stuff rice into pumpkins and serve.

(Note: This year I forgot to buy dried cranberries so I used some dried tart cherries instead. It was wonderful…better than the cranberries.)
