This and That

February has been my month of chaos… but a GOOD chaos.  You know those people who have 10 projects going at once?  I’m one of them!

Last month I had decided I wanted to redo the master bedroom AND as a Valentine’s gift – Himself’s office. 

And since I was going to paint the master bedroom (all the walls were still “sell-this-house-beige” from when we moved in), I might as well paint the living room, kitchen/dining area, and the long hallway. This meant I had to move stuff off of the walls and shelves… and we have a lot of stuff that had to be moved.  Uff-da!

All at the same time…

Are you picturing the chaos?  LOL 
But it’s all good and coming along well.  First thing that will be ‘done’ will be Himself’s office; that will take about one more week.  I’ve slowed down on the master bedroom to focus on that. 
And as I’m putting things back in the LR and kitchen, I’m doing a bit of rearranging there too.  New paint does that to you!
Now toss into this mix my pottery classes… my jewelry classes… cooking classes (both as teacher and student)… and a week in Missouri to see my precious niece and nephew.
And new gutters! 
And a truck that decided it wanted a new transmission - yep, poor Little Red is sick.  So I’ve been driving a rental CAR – meaning zero hauling capacity.  (Chrysler 200 is now OFF my possible want list for a car…)

Guttered!

After a storm, this is NOT what you want to see when you look out your window.  Uff-da!

 
And it didn’t look any better later from a different angle.  “Get new gutters” just moved itself right to the top of the priority list!

I’d never had to purchase gutters before, so I immediately was calling Dad to find to get the ends and outs of what I needed to do. 

 
Bids were gathered, contractor selected, and in just a short amount of time this van and trailer was in my driveway.  Pretty interesting operation…

 
This flat aluminum goes thru and comes out…

 

… as gutters.  As long of a gutter as you need.  No seams for stuff to get hung up on.

In just a couple hours I now had this… seamless, 6” gutters…

… with gutter guards.
Just what Dad recommended!

Pinterest Inspired: Mixed Media Hymn Art

When Best Friend came over for a ‘chick weekend’ (no Y chromosomes allowed!) we spent a day crafting. 

We were inspired both by photos of mixed media projects on Pinterest and some examples we saw shopping in Franklin, TN.  So we dug into my stash of stuff (which is why ‘junk’ is not always junk!).

Rough barn wood frames I’d gotten from my folks.  Burlap that had wrapped some plants from a nursery.  A hymnal I’d picked up at a yard sale.  And various odds and ends from everywhere!

Soon we each had a lovely piece of art for our homes.

…Without spending a cent!

Snow Babies

While I was up in Missouri visiting Little Bird and Little Hoss, we had a one day snow fall – on Valentine’s Day.  Perfect for taking the babies out to play (it was Little Hoss’ first snow).  The temps were warm enough to not be too cold for them and the snow just wet enough to make a great snowball.

“Wow!  The world is all white!”

“What IS this stuff?”

“He took my snowball!”

“Help!  I’ve fallen and can’t get up!”

“I’ll help you get up.”

“Come on!  You’ve got to help me with this Bro!”

“Watch out Aunt T!  I’m going to splat you with a snowball!”
We played out in the snow for probably a half hour (which is a long time for a toddler).  Little Hoss went in about 15 minutes earlier than Little Bird.  
Little Bird learned to throw snowballs (the tiniest little snowballs you’ve ever seen).  I’d stay close enough that she could splat me… then she would just about fall over laughing.  
Baby laughter and baby kisses.  A Valentine’s doesn’t get much better than that!

Update on Office Makeover - #2 The Desk


Now that my painting is finished and I’m back from spending a week in Missouri, I’m picking up speed on the office makeover for Himself.  I’ve been working on his desk… which is actually our old kitchen table.  It is perfect since it gives him space to spread out his paperwork as he enters data. 

To start working on it, I cleared everything out of the area.  The file cabinets are out of here… next trip to the ReStore they are coming with me.  I have a plan for his files so they won’t be needed anymore. 

Next I moved the table over to make space for the new filing area.  That will be built next week. 

The light will be changed out… have to get up in the attic to bring down one I’m going to use instead.  And I’m thinking of putting the speakers on a small shelf on the wall behind the monitor.  They’re in the way on the desk. 

That leaves the desk table as pretty much a blank slate for me to organize as the office comes together over the next two weeks.

Salud! at Whole Foods: The Cutting Edge

I was able to pick up another class at Whole Foods… this time on boning and filleting.  I wanted to see if I could pick up any “tricks of the trade’ so to speak, since the instructors were the store’s head butcher and fish monger.



We started with Jeff showing us how to fillet out a fish.  A catfish to be exact (but any non-flat fish fillets out the same). 



He gave us tips on where to make our first slice and how to find the backbone to guide us so we would have the least amount of waste.
Then we each headed over to our own cutting board to give it a try.



I didn’t do too badly.  Could have been a bit neater across the ribs but I was satisfied with my fillet.  But this wasn’t my ‘first rodeo’… Dad and I used to fish when I was a kid and his rule was “You catch it… you clean it”. 
Good rule.



Then we had a demo from Kevin on how to work up a pork rib roast.  It can be completely boned out for a loin roast.  It can be sliced between the ribs for chops.  You can leave some meat on the ribs after taking the loin roast and have ribs – both regular and baby back.



Next we were shown how to bone out a chicken breast from the whole breast section.  The main thing is to go slow and easy, using the ribs as your guide. 
Make sure you separate the breast meat from the tenderloin meat!
Once again we each had the chance to bone out some chicken at our stations.



Then Merijoy took over and taught us some fantastic recipes using the fish and chicken we’d just prepared.
First was the catfish cooked in parchment paper.  This is a great way to cook delicate meats to keep in the moisture and flavors.



One of the volunteers showed us how to make the parchment pouch using a heart shaped piece of paper.  (Truthfully, the shape doesn’t really matter… just make sure it seals to lock in the moisture). 



My pouch right before I sealed it – yellow squash, mushrooms, fennel, garlic, cilantro, salt and pepper.
Those were put in to bake as we started the next recipe; a chicken roulade (roll-up).   The stuffing was sundried tomatoes and spinach.



Here it is browning up.  Don't forget to take out the toothpicks before you serve!
We did another chicken dish that I’ve included at the bottom of this post.  Fast, easy, and very good.



“Fish in Parchment”



“Spinach Stuffed Chicken Roulade” with a side of wilted greens and mashed potatoes.

“Chicken Saltimbocca” over Linguine Prima Vera (the leftover veggies from the fish recipe!)



Chicken Saltimbocca over Linguine 

(This traditional Roman dish is classically made with veal but can also be made with chicken or turkey.)

4 boneless, skinless chicken cutlets (about 4 oz each)

Salt and pepper

8 thin slices prosciutto

8 sage leaves (more for garnish if desired)

3/4 cup flour

2 Tablespoons butter, divided

1 1/2 teaspoons olive oil

1/2 cup dry white wine

1/2 cup low-sodium chicken broth

Lemon wedges

Grated parmesan cheese, for serving

Sprinkle each cutlet lightly with salt and pepper.  Top with a sage leaf then the slice of prosciutto.  Place cutlets between 2 sheets of parchment, waxed paper or plastic wrap and gently pound to an even 1/4 inch thickness… pounding the sage and prosciutto into the chicken.

Spread the flour on a shallow plate and dip the chicken in it, lightly coating both sides (without losing the sage and prosciutto!).  Heat a tablespoon of butter and the olive oil in a large pan.  When the butter begins to foam, add the cutlets to the pan, prosciutto side down.  Cook 3 or 4 minutes per side, turning once, until lightly browned and cooked thru.

Meanwhile, cook linguine according to package directions.  Drain pasta and place on platter.  Top pasta with chicken and cover to keep warm.

Add wine to the hot pan and stir with a wooden spoon to loosen all the brown bits from the bottom of the pan.  Let the wine reduce by half, then add the chicken broth and reduce again.  Remove the pan from the heat and swirl in the remaining tablespoon of butter.  Taste and adjust seasoning with the salt and pepper.

Update on Office Makeover - #1

Well, it’s coming alone slowly because I had do a lot of painting (like most of my upstairs) before I can really concentrate on Himself’s office.  No problem tho, since I have all month to work on it. 

I cleaned out most of the closet and have been putting on paper my plans for the room.  That’s enough for this week!
On the positive side, my living room, kitchen, hallway and master bedroom look great!  You’ll get to see those very soon.
