Life is good when you have a friend who has egg chickens. We get all the double yolk eggs we want. Omelets, quiches, salt preserved yolks, pasta... oh yeah.
And this aren't little bitty eggs either.
Way beyond large...
The average size of a jumbo egg is 2.5 ounces. This egg... about 4.5 ounces.
(Can you tell I just got a new food scale? LOL)
So we are good-to-go on anything to do with eggs.
I decided to see what sort of stuffed eggs they would make. Ended up the white was pretty thin.
But oh goodness, what a lot of stuffing it made!
